   After-Work Salmon Cake  
       
Prep Time : 5 minutes
Cooking Time : 5 minutes  
Yields : 2 servings
   
Ingredients :  
4 ounces cooked salmon
6 rice crackers
1/2 onion, diced
2 cloves garlic, minced or pressed
1 tablespoon lemon juice
1 tablespoon olive oil
Dash black pepper
Dash corriander
 
   
Directions :  
1. Break salmon and rice crackers into small pieces.
2. Mix all ingredients except the oil together. Create several small patties.
3. Refrigerate for 1 hour.
4. In a skillet, heat oil on high. Quickly fry both sides of each patty for 2 minutes.
5. Serve with rice or veggies and a lemon slice.
