| Apple Salsa |

| Ingredients : |
|
3 apples, peeled, cored and chopped
1 medium sweet onion, diced
1/4 cup fresh cilantro, chopped
1 tablespoon fresh mint, chopped
2 teaspoons lime juice
1/4 cup flaxseed or olive oil
1 tablespoon maple syrup |

| Directions : |

| Mix all the ingredients together and serve. |

| Variations : |
|
* Some like a chunky salsa. If you like it a bit more smooth, place half of the combined mixture in a food processor or blender and pulse for just a second or two, to chop the mixture, not puree. Great with baked chips or grilled veggies. Also tasted great with Mexican dishes!
* Try this with different apples each time or try blending 3 different types of apples in the same batch. |
