   Very Versatile Mashed Tempeh  
       
Prep Time : 10 minutes
Cooking Time : 30 minutes  
Yields : 4 servings
   
Ingredients :  
16 ounces tempeh
1 large red onion
1 bunch scallions, finely chopped
1/2 cup red pepper, finely chopped
1/2 cup celery, finely chopped
1 tablespoon tahini
1 tablespoon grated ginger
1 tablespoon lemon juice
 
   
Directions :  
1. Place tempeh, onion, and scallions in a pot with 1/4 cup of water and cook until ingredients are soft and water has been evaporated, about 30 minutes.
2. Transfer ingredients to a bigger bowl, mash with potato masher or fork.
3. Add celery, pepper, tahini, ginger and lemon juice. Mix very well with a pinch of salt to taste.
4. Serve in a wrap, in a whole wheat pita, or with a side of steamed greens.
 
   
Variations :  
If you would like, try adding 2/3 cup of soaked sea veggies, such as arame, hijiki or dulse, add in step 1, with the onion and scallion. This variation will produce a bit of a different taste and extra minerals and nutrients!
