   Millet Tofu Patties  
       
Prep Time : 10 minutes
Cooking Time : 40 minutes  
Yields : 4-6 servings
   
Ingredients :  
1/2 block of tofu
1 cup millet
1 cup mustard greens, chopped
1 medium onion, finely chopped
1 clove garlic, minced
1 tablespoon tamari
3 cups water or veggie stock, boiled
dash of cayenne pepper
 
   
Directions :  
1. In a saucepan, saute onions and garlic in a dash of olive oil for 3 minutes.
2. Stir in millet grains, frying until they are lightly colored.
3. Pour boiling water over millet and cover. Cook on medium-low for 20-30 minutes until liquid is evaporated.
4. Blend millet, mustard greens, tamari, cayenne and tofu in blender.
5. Spread out on baking sheet about 2/3 of an inch thick and chill thoroughly.
6. Heat broiler or toaster oven. Cut into 8 flat cakes.
7. Broil or toast on each side until golden brown.
